Everyone knows Oreos are #accidentallyvegan but did you know chocolate chip hobnobs are too? I prefer a lighter biscuit like a hobnob in pies like this, Oreos can sometimes have too much crunch to them. Chocolate chip hobnobs, Baileys chocolate mousse and an orange cream top = 👌🏻
A new plate and a new pie! I wanted to try and recreate my Baileys pie in vegan form. But it turns out I don’t like vegan Baileys that much. So this turned out to be a Orange Baileys Mousse Pie instead. The topping is whipped coconut cream with orange juice and orange zest, which really balances the Baileys flavour really well. Stay tuned for inside pics.
I’ve made this vegan Cherry Chocolate Crumble so many times but I still can’t decide on the base I like best. This is with an Oreo base (it’s not burnt in case you thought that) but I’ve made it with vegan pastry, vegan chocolate pastry and an vegan oat biscuit base. I’ll try it tonight and let you know what I think 👌🏻
The good thing about pie bases, vegan or otherwise, is that you can just add what you fancy and make something good. This is a mixture of oat biscuits (#accidentallyvegan), a few Oreos for colour and a handful of pretzels for a bit of saltiness. Mixed with 100g of non-dairy butter and voila - the best crunchy, salty biscuit base for a sweet pie.
Do you know how easy it is to make vegan chocolate mousse? It’s 2 ingredients. Vegan chocolate - doesn’t have to speciality, some dark chocolate in supermarkets is #accidentallyvegan & a bit of non-dairy milk or cream. For this I used the @oatly pouring cream (which is incredible on its own). Melt the chocolate however you prefer, slowly mix in the milk/cream and then use a hand mixer to add air into it so it becomes a mousse (usually takes about 5 mins of whisking) et voila! I also added a spoonful of Vego Hazelnut Spread, because it’s delicious 🙋🏻‍♀️
